Taco Bake

This is my go-to taco bake recipe, and it never lets me down.

Taco night is great, but sometimes I want all that flavor without the assembly line of shells, toppings, and individual plates. This bake solves that entirely, seasoned beef, plenty of cheese, and crushed tortilla chips layer into one dish that goes straight from oven to table.

This has become my regular busy-weeknight version of taco night, genuinely hearty and easy enough for anyone in the family to serve themselves.

Why You’ll Love This Recipe

A few reasons this bake earns its regular spot in the rotation.

Genuinely hearty: a full, satisfying dinner in one dish.
Easy assembly: layer and bake, no individual tacos required.
Family-friendly: a genuine hit with kids and adults.
Great for leftovers: reheats well the next day.

Why This Works

Layering the crushed tortilla chips between the beef and cheese, rather than only on top, is what keeps some of them genuinely crunchy instead of turning entirely soft under the weight of the toppings. Chips buried too deep under wet ingredients lose their crunch completely, while a layered approach lets some stay crisp.

Step-by-Step

Brown the ground beef with chopped onion, seasoning with taco seasoning according to the package directions. Stir in a bit of water and let it simmer until slightly thickened.

Spread a layer of crushed tortilla chips in the bottom of a greased baking dish. Top with half the seasoned beef, then a layer of shredded cheese.

Repeat with another layer of chips, the remaining beef, and the rest of the cheese.

Bake at 375 degrees for 15 to 18 minutes, until the cheese is melted and bubbling. Top with shredded lettuce, diced tomatoes, and a drizzle of sour cream right before serving.

Tips

  • Layer the chips between the beef and cheese, this keeps some genuinely crunchy.
  • Don’t add the fresh toppings until after baking.
  • Use a good taco seasoning, it carries most of the flavor here.
  • Let the beef simmer with a bit of water for the right consistency.
  • Serve immediately while the cheese is still melty.

Variations

  • Add a layer of refried beans.
  • Use ground turkey instead of beef.
  • Add diced jalapenos for heat.
  • Top with sliced black olives.

What to Serve With

  • Mexican rice.
  • A simple side salad.
  • Extra tortilla chips.
  • A cold soda.

Storage

Refrigerator: store the baked dish without fresh toppings for up to 4 days.

Freezer: freeze the baked dish without fresh toppings for up to 2 months.

Reheating: reheat covered in the oven at 350 degrees until warmed through, then add fresh toppings.

Make Ahead

The beef can be seasoned and cooked a day ahead, making assembly on a busy night much faster.

Frequently Asked Questions

Can I make this ahead of time?

Yes, assemble it without the fresh toppings and refrigerate, then bake fresh when you’re ready.

Why did my chips get soggy?

They were likely piled too deep in one layer, spreading them between layers of beef and cheese helps some stay crunchy.

Can I use a different chip?

Yes, any sturdy tortilla chip works, avoid thin, delicate ones that break down too quickly.

Final Thoughts

This bake proves taco night genuinely works as one easy casserole. Give it a try for your next busy weeknight.
